Eat Healthy When Camping

Packing the food for your next camping trip can be made easy - just think 5 A Day. Here are some ideas to get you started.

• Cut up fresh fruit such as pears, strawberries, cantaloupe, watermelon, and apples, and have them available to snack on throughout the day.

• Make sure to pack orange or apple juice for your morning breakfast.

• For dinner, grill Veggie Kabobs that include fresh green peppers, red onions, fresh zucchini, summer squash, mushrooms and cherry tomatoes. Or create your own by using your favorite vegetables.

• For an afternoon snack, choose dried fruits like raisins, dried plums and bananas or munch on raw vegetables like carrots, celery or broccoli.

Eating just five to nine servings of fruits or vegetables a day promotes good health and will keep you feeling great as you enjoy your camping experience.

Try this recipe next time you're camping:

Vegetable Medley Packets

Ingredients:
4 new potatoes, sliced thin
2 small summer squashes, peeled if necessary, cut in 1" spears
8 mushrooms, sliced thin
1 stalk celery, sliced thin
1 carrot, sliced thin
1 onion, sliced thin
2 Tbs olive oil or butter
1 clove garlic, mashed
1/4 t salt
1 tsp thyme
1/4 t cayenne
1 tsp paprika
Black pepper to taste.
 
How to Prepare:
Butter a large piece of heavy-duty foil. Place veggies in center of foil. Mash the garlic with the salt, sprinkle over veggies. Sprinkle other spices on. Drizzle with olive oil or butter. Seal packets so they won't leak. Place over medium coals for 30-40 minutes, turning occasionally.
